1. Hot Schezwan Fried Idlis

Whenever we think of breakfast options, the first thing which clicks us is always idli-sambhar. The authentic south Indian breakfast fills you up for hours and is full of taste too!

But, let’s give the idlis a twist with the hints of fiery schezwan and some veggies. 

Here it begins…in a bowl, soak 250 grams of semolina(sooji) in 150 grams of yogurt, half cup of water and half tsp of salt. Mix it well and let it rest for 10 mins. Now, grease the idli maker (you can choose a microwaveable idli maker for quick results) with cooking oil using your fingers. Pour the batter slightly into the molds individually. Microwave it for 7-8 minutes until the idlis are cooked completely. Refrigerate the idlis for another 15 mins. Chop the idlis into 2 pieces (if they are the mini ones) or into 4 pieces (if they are the bigger ones). Now, in a wok or kadhai, add 2tbsp of cooking oil, add 4 garlic cloves chopped with 2tbsp of grated ginger. Add 2 medium-sized diced onions and sauté it for 2-3 minutes on medium flame. Add 50grams of finely chopped cabbage, 20grams of chopped bell pepper, 20 grams of chopped carrots, 20 grams of diced French beans and toss the vegetables for about 4-5 minutes on a medium flame. Pour about 4-5tbsp of ChefBoss Schezwan cooking sauce and half a cup of water. Give it a good mix for 3-4 minutes and add chopped idlis to it. Toss it well. Garnish it with finely chopped spring onions! Hot Schezwan fried idlis are ready to gobble up with a cup of cappuccino.

2. Vegetable Schezwan Poha

The easiest and quickest breakfast option is everyone’s favourite – Poha! The addition of schezwan sauce to it with the combination of some veggies will make this dish delectable.

Let us get started! Heat 1tbsp oil in a kadhai, add a pinch of mustard seeds and half tbsp of cumin seeds (jeera). Allow it to crackle. Add 6-7 curry leaves, 1 medium-sized onion finely chopped and sauté it until softened. Now, add half cup of green peas, 1 small-sized potato chopped in squares, sprinkle half tbsp salt and 20ml water. Allow it to steam cook. Now, rinse 250 grams of poha in a colander in running water 2-3 times. Set the poha aside. Add 3tbsp of ChefBoss Schezwan Cooking Sauce to the sautéed veggies and finally add rinsed poha to it. Give the poha a gentle stir until all the ingredients are mixed properly. Allow it to steam cook till the poha gets puffed up a little. Turn the heat off. Garnish it with chopped coriander and there you are! Serve it hot with a cup of tea.

3. Schezwan Potato Wedges

Other than French fries, another most loved go-to snack is potato wedges. Because you can pair it up well with butter-toasted garlic bread slices, multigrain bread, wheat bread, or any other bread of your choice. But have you tried a spicy schezwan version of your potato wedges? Wanna try? Here’s this amazing recipe: Begin with chopping 4 medium sized potatoes into wedges and soak them in water. Now, in a wok or kadhai, heat 300ml of cooking oil on medium flame for 2-3 minutes. Add potato wedges slightly in to the oil and deep-fry it until golden brown and crisp. Drain on absorbent paper in a plate. In another wok, heat 2tbsp of cooking oil, add chopped garlic, ginger, onions and bell peppers. Sauté it for 3-4 minutes. Pour 4tbsps of ChefBoss Schezwan Cooking Sauce and 100ml water. Toss it again for 3-4 minutes and add fried potato wedges. Give a good stir for 2 minutes. Turn the heat off. Garnish it with roasted white sesame seeds, chopped coriander and spring onions.
